Monday Meal Plan 4/15 – 4/28/13

It’s time for a new meal plan!  This week is crazy busy for me – seeing clients, going to networking events, training, kids activities, writing blogs and more. If ever there was a week that I needed a meal plan, this is it! G will also be grateful because he will be doing dinner with the kids on his own 2 nights this week. The fact that dinner will be planned and mostly prepped beforehand will make his life easier. One of the keys to a happy marriage is making your spouse’s life easier whenever you can!

I discovered some new blogs over the past 2 weeks and I pulled some recipes for my meal plan from them. I can’t wait to try the new recipes! So here is what we will be eating:

Monday Red Lentil Dal
Brown Rice
Cauliflower
Omelette Pizza (page 17)
Salad
Tuesday Pizza Tasting at High School Lasagna Cupcakes
Spinach salad
Bread
Wednesday Taco Stoup
Cornbread (I use 1/2 cup sugar and 1/2 whole wheat flour)
Shrimp Fried Rice (I add leeks to this and also double the brown rice so I have lots of leftovers)
Thursday Pinot Grigio Chicken
Whole Wheat Couscous with peas
Garlic Green Beans
Chicken Tacos
Corn
Guacamole
Friday Spinach and Feta Turkey Burgers
Grilled Sweet Potatoes and Apples
Fruit
Easy French Dip Sandwiches
Apple Cole Slaw
Saturday Wing it night! Wing it night!
Sunday Steak (whatever kind looks good and is on sale)
Grilled veggie kebabs
Potato Salad
Grilled Pizzas (White Bean and Prosciutto; Roasted Peppers and Caramelized Onion)
Garden Salad

I am pretty set except for the potato salad. I have never really found a potato salad recipe that I love. Who can help me out? If you have any links to recipes you think are fantastic, that would be great. Or if you want to share a secret family recipe with me I would love that as well;)

  1. We are prepping to begin a month-long candida cleanse next week, so meal planning is critical for us to be successful… This is not my forte, so I appreciate you sharing your methodology here, Michelle!

    • Wendy, good luck on your cleanse! I am actually putting together a webinar on meal planning because so many people have said to me that they don’t know where to start. It is a process that gets easier the more you do it. I think having some direction on how and why to do it is critical for getting people on board. So glad that you are finding the information useful! Michelle

  4. I am new to meal planning but so far it is working out for me. I am prepared so I don’t make poor food choices and know what I am eating is healthy and I make enough for lunch the next day. Your organization is commendable.
